Our white chickpeas are grown exclusively in Italy using traditional and organic methods, respecting nature. The main characteristic of our chickpeas is that they are small and once cooked remain compact and crunchy. They are an excellent food rich in protein, starch and mineral salts. They are also a rich source of raw fibre. They have a slightly higher fat content than other legumes, which contributes to their higher energy value and gives them a softer texture.
Excellent when combined with fish dishes, they are also ideal for making hot soups, side dishes, tasty salads and gourmet dishes. They are best enjoyed with just the addition of salt and Extra Virgin Olive Oil. To obtain a good result, we recommend cleaning the pulses further, passing them several times under running water, let them soak for the prescribed time, putting them in cold water and cooking: the pulses must not be salted when boiling otherwise the skin will split and the pulp will be hard.
