The cooking, carried out in steam ovens, reaching core temperatures above 69°C, gives the ham a soft texture and a delicate flavour. After cooking, the product is removed from the cooking bag and packaged. Cooked ham has a sweeter and less salty taste compared to raw ham. It has a delicate aroma and a tender, soft texture that is easy to slice thinly, making it ideal for sandwiches, salads, and various culinary preparations.
