Marango: Adult Cattle crossing “Angus marbled”
Marango is our Italian supply chain project, born from the cross between pure Black Angus, Friesian, and Maremmana mares. Each head grows in the wild and follows a certified “Marango Fioc” diet, which guarantees the welfare of the animals and gives them an excellent level of marbling, so the meat is fat, savoury and tender at the same time. The result? A meat with a mineral taste typical of the Maremmana combined with the representative sweetness of Angus.
Marango mortazza is made with beef, salt, natural flavours and mangalitza pork lard. Steamed for 16 hours at 80°C and reaching 74°C, it is removed from the oven. The cooling phase takes place in the blast chiller until the product reaches -1 ° C.
